Sane Holiday Eating . . . Plus, My Own Disease Progression

Holiday time always threatens us with fat-laden dishes that can cause pandemonium in our carefully orchestrated eating habits. Straying now and then from the path is okay, but there are certainly lots of delicious low-fat side dishes, rich with fiber and antioxidants, that can be substituted. The recipe in this blog is a good example of how to creatively keep eating habits sane.

Also remember that the current dietary guidelines from the USDA recommend five to nine servings of vegetables and fruit a day, which is not as daunting as it may seem since a serving is usually about half a cup a day.

My Own Disease Progression

After having a prostatectomy in 2001, followed by salvage radiation soon after, my rate of PSA doubling time ranged from 18 to 20 months, a rate that I decided along with my doctors did not require any immediate treatment, other than following a prostate-healthy diet, exercising, and having my PSA checked every three months. Over eight years, my PSA increased from about 0.17 to 3.5. However, in October, my PSA jumped from 3.5 to 6.01 . . .  whoops. After much discussion with my doctors, and confessing that I was not eating as well, nor exercising, and that I was under an increased amount of stress, we decided to wait another six weeks and repeat the PSA test, and agreed that I would pay more attention to my diet, get more disciplined about my exercise regimen, and attempt to reduce the stress in my life.     

In the near future, I’ll share the results of my latest PSA test.
