If You Got Beef Then Eat A Pork Chop...

Since I started really cooking more in the last couple of months, I thought it might be good to try and create my own recipe. Throw something together and be PROUD of what I made! I haven't created a meal beyond my really cool and yummy rice and beans.

I am also hurting for money this week! We do not get paid here until the day after Christmas! I hate getting paid on the bi-week! It messes everything up sometimes and more often than not I'm looking at my bank account wondering what the heck I bought!

So a couple of nights ago I dug through the freezer searching for something to eat. At my parents house they have three freezers. The largest one is stuffed to the brim with meats and veggies. Half of which I probably bought and forgot about. So there I was holding pork chops in one hand and ground beef in the other. If you got beef then eat a pork chop... who knows that song?!

Pork chops it was!

I made this marinade: 1/4 cup of orange juice, 1 tablespoon of wheat-free tamari, 1 tablespoon of apple cider vinegar, 1/4 cup of finely chopped onion, 1 teaspoon garlic powder, 1/4 tsp of oregano, 1 tablespoon of cilantro, 1/2 teaspoon crushed red pepper, S & P to taste, and 1/4 cup of oil. I also threw in 1 tablespoon of HOT SAUCE!

I marinated the pork chops in the freezer overnight and then grilled them on my grill pan. They were thin sliced so it did not take long before they were all cooked! I served some stirfry veggies on the side and called it a yummy dinner. I wanted to make rice so that I could eat it, but I forgot about it.. and made those Pillsbury rolls on the side for Taste Tester.

He had two bites, declared it delicious and then doused it with BBQ sauce. "I just think it needs some barbeque sauce! It's great though!"

GEE. THANKS!

I loved it too. It had tang from the OJ and spice from the Hot Sauce and pepper! Maybe next time I will use lime juice instead and throw in some chile peppers to clear up my sinuses...

Also congrats going out to my sister-in-law! Taste Tester's sister is having a baby and yesterday she found out she was having a BOY! The FIRST boy in the family! Seriously! Taste Tester has 5 nieces, he has a girl, I have a girl. I have 6 nieces and only 2 nephews. So for there to be a little BOY in the family... is a great thing! I'm sure right now Taste Tester and his brother and brother in law are planning out his future baseball career...

Christmas is only 7 days away!!!!!!!!!!!
