
The other day I was talking to someone who told me that they had to stop their healthy diet because of their continual health problems. In that I know this person had previously been living on junk, soda, and take out food I couldn't quite understand why healthy eating would be a problem--EXCEPT for the fact that there's a common notion that healthy eating is very hard to do. I've heard doctors say such things as it's unrealistic and that people should just do their best to decrease their junk food intake. As opposed to the better advice, never eat junk or processed food but eat a real whole food diet in order to recover from illness and to stay healthy.
The fact is that recovering from CFS is probably the hardest thing anyone could do and it takes work, diligence, persistence and consistency in all areas not just diet. And to top it off there's no guarantees about how long it will take to recover. But one thing that is 100% guaranteed is that if you don't eat a real whole food diet you cannot recover and you will end up being sicker with other illnesses and conditions. People that believe otherwise have bought into the mass propaganda that we've been fed via the media that processed food isn't harmful. Well just walk into a large grocery store, aren't 99% of the products factory produced and filled with chemicals? Isn't most of the population eating that? If everyone else is eating it including doctors it must be ok!
It's not. Whatever you love to eat now you can pretty much eat in a real whole food version. Do you love burgers? Why not make them with lean ground beef or top sirloin and serve on some chunky whole wheat bread with some raw milk cheddar? It's so much better, it tastes better and it's not going to damage your health to eat some red meat occasionally as a part of a real whole food diet.
I even make my own fries, they're more like roasted potatoes but they are so incredible!
To make my roasted fries --Cut up 3 large russet potatoes with skin on (or peeled) into French fry size pieces or larger (as pictured here)
In a large bowldrizzle 2 Tablespoons of gently melted coconut oil over potato pieces
Add sea salt and coarse ground black pepper (you can touch the raw potato with your finger to see how salty they are, IMO the more pepper you use the better). Mix well.
Put on baking sheet and bake IN A PRE-HEATED OVEN at 350 for about an hour or until done when tested with a fork.
Let's do some reality checking and decide what's more important. Is convenience and being part of the rest of the pack a better trade off than starting to feel well and staying well? When you look at food with chemicals program your brain to think TOXIC! FATTENING! Instead of looking at your favorite fast food French fries and thinking YUM! think OMgosh I don't want to be disabled my entire life!
Here's a really quick and wonderful breakfast, lunch, or snack I made today for lunch that's pictured above.
Egg & Sautéed Spinach Sandwich Hunk of flax seed bread toasted (or other healthy grain bread)
1 Large organic or free range egg
1 TBS olive oil
Spinach
Sea Salt
Coarse Ground Pepper
For the egg, bring 3 inches of water to boil in a small pot. Add the egg, cover, remove from heat and let sit for 6 minutes. To serve crack the egg in the middle with a large knife and scoop out the insides.
Toast the bread.
Sauté the spinach in the oil.
Top the toast with the spinach, egg, salt, and pepper. Have it with some green tea for breakfast too, it's divine! And please eat well, feed your body what it needs to heal! That's real whole food not chemicals and sugar!
