Howdy!
This afternoon, I finally finished the scrapbook pages (wahoo!) and had a little snack of a tbs of pb with some Triscuits while I was working. For lunch, I made a turkey wrap on a low-carb whole wheat tortilla with a Laughing Cow, spinach, mustard and banana peppers. I also had a "baked" nectarine:


The studying didn't happen (so I've got to catch up on that tonight- bah) because before I knew it, it was time for spin class. Spinning was amazing today-- it was one of those days where I didn't personally feel like working out (getting on the treadmill would have been a little rough), but since I was teaching it was all of the motivation I needed. A lot more people took my class this week, which definitely made it more fun and exciting. One of the girls was wearing a HR monitor in the class and burned 475 cals-- and she got there 10 minutes late! Not too shabby :D
When I got home, I was feeling munchy so I had some grapies while I was making dinner (take this amount x 2).

For dinner tonight, we had garlic and herb pork tenderloin, roasted ratatouille veggies (hence the title of this post) and I made the hubby tortellini with a basil-walnut pesto sauce.

It was a glorious meal and I'm stoked to have a plethora of veggie leftovers for salads, omelets and wraps :D
