Hope you've all had a great day!!!

This afternoon, I went to the gym to get a little more cardio in (it's a cardio-only day) and did 30 minutes on the elliptical on the cross country 2 program. I got home and made some lonchi: a tortilla "pizza" with a whole wheat low-carb tortilla, 1/2 oz reduced-fat cheddar, 1/2 cup no-sugar marinara and fresh basil. I also made a salad with turkey, sundried tomatoes, 1/4 cup garbanzo beans, spinach and balsamic vinaegar. It was faaaabulous.

Later on, I was ready for snacktime and my sweet tooth was fierce. I made some "protein pudding" (1/2 cup fat free plain organic yogurt and 1/2 scoop chocolate protein powder) and topped it with chocolate chips. How cute :D

I was stiiiiiiiillllllll snacky (maybe from all the crazy cardio I did today) so I had a baked peach with cinnamon and "garnished" it with a lovely blob of cool whip light. Oh yeah.

Jeni came to pick me up a few hours later (after watching Love Actually-- I watch that movie every single time I see it's on TV!!! I love it. And Hugh Grant is a beefy mcbeefcake), and we went to our friend Kelly's house, where some of the wives were working on scrapbooks. Jeni and I didn't bring any scrapbook stuff, but just went to chill, mingle, and munched some of the amazing food Kelly put together. She had veggies and dip, a fruit bowl, Kashi crackers and cheese, Morningstar pizza thingies, and a delicious dessert that I've never heard of before: an Eclair cake. Basically, it's graham crack crumbles, jello pudding mixed with cool whip so it's ultra creamy and wonderful, with a thin layer of chocolate frosting on top. I totally had a small piece (she used fat-free, sugar-free pudding and light cool whip- yessssssss), and it was incredible . I also had a small bowl of fruit. Great company and wonderful food, as usual :D

I wasn't too starving when I got home, but the hubby and Kim were ready for dinner, so I whipped up a homemade version of my favorite Indian meal: Chili Chicken

I sauteed onion, green bell pepper, garlic and ginger, then added yellow curry powder, chili powder, cumin, cinnamon and salt. I then added diced chicken and a little bit of reduced sodium soy sauce. When the chicken was finished, I stirred in diced tomato and fresh lime juice. I made mine separately, used double chili powder and added red chili pepper flakes. I like it spicy !!! I was super pleased with how good it came out!!!

Well I'm going to chill with the pilot since he came home early tonight!!! whoo hoo :D
