Hellooooooo! Hope you’re all had a great day! Mine is finally settling down!! It’s aight though, because is less than 48 hours I’ll be in the greatest city in the world :D Thanks to all of you who left suggestions (and sent emails) of must-sees and dos while I’m in NY!!! I’m SO EXCITED!
Yoga was sooooo relaxing tonight. I took a vinyasa class on base before teaching spin-- it felt glorious to stretch my aching muscles a little before getting them wound up again in spin ;)
After teaching, I had time to run home to see the puppies before going to the other gym to train my Shape Up group.
I grabbed a salad to hold me over until dinner:
Greens, herbs, tomatoes, sundried tomatoes and 1/4 cado

I trained my group, came home, and finally got to see my pilot!!! He’s been working INSANE hours (think 14-16 hour days…everyday since the beginning of last week) and I’m looking forward to hanging out with him this weekend. I like him, I guess ;)
For dinner I made Whole Wheat Pizza Empanadas, or what some people refer to as calzones :D
The recipe is secret (sorry!!!! You’ll get to see it eventually along with some others!), but I filled mine with veggies and spices

And the pilot’s with Italian sausage, wilted spinach, mozzarella, parm and ricotta cheese

(The spoon is stained from tumeric since I make Indian food so often)
Here’s my plate (with leftover veggies and marinara for dipping):

It was DELICIOUS. And now I have a food baby :D
With my Pizza Empanada, I wanted a glass of red with all of my soul. We have a bottle of organic vino here, but I couldn’t justify opening it for one glass. That’s why mini bottle are awesome. I feel slightly tacky buying them, but they’re just the right size for a glass with dinner.
Is anyone else watching the DWTS finale??? I’m rooting for Gilles… he’s a beefcake :D

Something to talk about: Do you have any vacations planned this summer?? Which one are you looking forward to the most? I’m way excited for NY but even MORE STOKED about Europe :D
