Chickpeas with Tomatoes and Spinach

2 Tbsp Olive oil 1 or 2 Cloves garlic 1/2 pint Cherry tomatoes 1 15 oz can Chickpeas 2 jarred Roasted red piquillo peppers 1 c Frozen spinach, thawed S&P, chili powder, and cumin, to taste
Mince and then saute the garlic in olive oil. Add tomatoes and allow them to cook for five minutes or so on medium heat, just until they start to split. Drain and rinsechickpeasand add to pan. This is when I add my spices, so the tomatoes and chickpeas can get a good coating. Drain and rinse the peppers as well, then give them a rough chop. Add them, and then the spinach. Saute for a few more minutes. Eat!
I'm obsessed with chickpeas right now; I can't believe that something I turned my nose up at for years is actually so yummy, healthy, and cheap. Next I might try them in pasta. Have any chickpea recipes that you love?
