Baingan Ki Lonj

Ingredients
500 g brinjals
50 gm ghee
50 gm onions, finely chopped
10 gm red chilli powder
10 gm ginger, chopped
For garam masala powder
1, 2 gm cloves
2 gm cinnamon
2 gm cardamom
Make powder of the above ingredients
10 gm peppercorns
10 ml lime juice
Salt to taste
Coriander leaves for garnishing
Method
Make a slit, lengthwise in the brinjal. Keep aside.
Heat ghee in a pan. Fry onions, ginger, chilli powder, salt and powdered garam masala.
Stuff the brinjals with the above masala.
Tie a piece of thread around each brinjal to prevent the stuffing from coming up.
Heat ghee in a frying pan / kadai. Arrange the brinjals in the frying pan. Seal with the lid.
Put the frying pan on a low flame and cook for 20 minutes.
Serve the brinjal after removing the thread.
Garnish with coriander leaves.
