Barbeque Chicken with Pear and Mango

Serves 4
Time required - 1 1/2 hours


Ingredients


Chicken breasts- 4, without skin

Ingredients for marination


Orange juice- 50 ml
Olive oil- 20 ml
Garlic- 23 cloves, crushed
Tamarind paste - 20 g
Fresh basil- 20 g (chopped )
Ginger - 10 g ( chopped )
Salt to taste
Pepper powder - to taste


For the relish


Pear -1, diced finely
Fresh mango - 50 g, diced finely
Coriander leaves - 10 g , ( chopped )
Lemon juice= 5 ml
Salt to taste


Method


1, Place the chicken breasts in a shallow dish.

2, Mix together the remaining ingredients. Pour the mixture over chicken breasts and marinate in refrigerate for an hour.

3, Preheat grill or barbeque for medium high heat. Place chicken on grill and cook for about five minutes per side.


4, Remove from heat and serve with relish.


To make relish: Mix all ingredients together and chill for 15 minutes ( Any seasonal fruits can be used for the relish . eg Strawberries, Kiwi fruit, oranges, apples.. ).
