Zach's Birthday arrived on Saturday...
Which means, of course... The traditional Red Velvet birthday cake,
Some well deserved Birthday video game time
While I contentedly baked the above mentioned cake,
A surprise visit from our friends Julie and Del,
A thoroughly festive outing to our favorite Japanese restaurant, where Zach was regally crowned,
Complete with, um, yes, sake bombs,
And, the next morning, a festive Birthday brunch complete with Birthday banana bread!
I know there are many banana breads on the planet, but, after testing many versions amidst much repeated tinkering (we
always have an excess of ripe bananas in the kitchen), I've concluded that this is the Ultimate Banana Bread - full of healthful whole wheat and yet as light and gently sweet as can be...
Fit for a Birthday, no less!

Whole Wheat Banana Bread 2 very ripe bananas
1 cup raw sugar
1/4 cup olive oil
1/4 cup applesauce
1 egg
2 egg whites
2 T low fat buttermilk
1 cup whole wheat flour
1/2 cup
self rising flour 1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
~ Preheat the oven to 350 degrees. Coat a loaf pan with cooking spray, and dust it with flour.
~ In a large bowl, mash the bananas.
~ Whisk in the raw sugar, oil, applesauce, egg, egg whites, and buttermilk.
~ Add the whole wheat flour, self-rising flour, baking soda, cinnamon, and salt, and stir until just combined.
~ Pour the batter into the loaf pan, and bake for 45 to 50 minutes - until a knife inserted in the center comes out clean. Allow to cool in the pan, then invert onto a plate and serve...
And then have a long nap after all the festivities... :-)
