This is a meal I made Saturday night, May 16th - Tofu, Deveganzied. We all know that tofu is a fabulously versatile meat alternative, but versatile enough to be meated up? I think so! My husband was not as excited, so this meal serves one. Drain and press a block of extra-firm tofu. Cut in half and store half for later. Cut a small-medium hole in the side of the block - try to make a big space but be careful not to cut through to the other side, be sure to save the removed tofu. Fill the hole with turkey pepperoni (I’m semi-vegetarian) and reduced fat mozzarella cheese. Cover the hole with the tofu you removed. Next dredge the block in egg and seasoned bread crumbs. I was pressed for time so I used a frying pan and .5t evoo, but I highly recommend that this recipe be baked at 450* for 30minutes. Let cool and enjoy. I loved the flavor combination of this dish and it was fun to make tofu sort of "naughty!"
