I hope the saying "It’s darkest before dawn" applies to poison ivy because Matt did not have a very fun afternoon. He got the steroid shot at 10 this morning but there seems to be no improvement. His left eye is almost completely shut. We’re hoping it will be much improved when he wakes up tomorrow, and he called in to work and thankfully found a replacement for his 3 AM Sweets shift tomorrow.
I had no desire at all to snack this afternoon from my late lunch, but my was dinner a bulls eye!
MamaPea’s Pumpkin Spice Roasted Chickpeas are SO GOOD!!

Like MamaPea, I could have easily eaten the whole batch! Sadly I had to share with my other half!! And sadly they are now all gone! I let them roast until they were just crispy and the black charred skins that fell off were SO GOOD!!! I’d compare them to a cross between a popcorn kernel (that you can actually chew) and a soy nut with a carb-y chew to them. I left out the ginger and vinegar in the recipe (don’t really care for either) and added some nutmeg and cayenne pepper for some spice!
Served with broccoli roasted in the same oven tossed in balsamic and maple syrup before roasting (it was in for about 15 minutes with the peas)


On the side we had toasted Flax Oat Bran. Best. Bread. Ever. Seriously, if you have a Great Harvest within 100 miles of you, take a road trip and pick up some. It’s so doughy but has crunch from walnuts and flax and is supppper healthy!

I actually ate this whole meal with my fingers!!! I got up to get a fork and realized that the peas roll and I’d enjoy them more bite by bite. I shoveled them in!


A while later I dug into the chocolate for some antioxidants. MarathonVal sent me this Vosges chocolate for my birthday. It’s flavored with sweet Indian curry powder, coconut flakes and milk chocolate! (Thanks Val!)

Loved the awesome flavor combo! Totally quality chocolate. I had two of these:
