Nadia Bora Tarkari (This potato and coconut dish is a speciality from Orissa )

Serves : 4
Time required : 20 minutes

You will need

400 g potatoes , cubed and lightly fried in oil
Cooking oil for deep frying
50 g onions , chopped
10 g ginger- garlic paste
1 teaspoon chilli powder
½ teaspoon turmeric powder
½ teaspoon cumin ( jeera ) powder
Salt to taste
2 green chilies, slit lengthwise ( for garnishing )
1 teaspoon coriander leaves ( for garnishing )

For the coconut dumplings

2 coconut , grated and ground to a paste with 10 ml water
50 g flour

Method

To make the coconut dumplings

Shape the coconut paste into small balls using the flour for binding. Deep fry in some of the oil.

Heat 2 teaspoon oil in a pan. Add chopped onions and sauté till golden brown. Add ginger and garlic paste and continue to cook. Add chilli powder , turmeric powder and jeera powder. Then add the fried potato cubes. Add the fried coconut dumplings and mix in well. Check the seasoning. Remove from heat . Garnish with green chillies and chopped coriander leaves.
