Spinach Rice

Serves : Two

You need

1 bunch ( 250 g ) spinach
1 cup ( 200 g ) bamati rice
2 cups water
1/4 cup chopped fresh basil leaves
1/4 cup yogurt
1 1/2 teaspoon chicken stock powder
2 onions , sliced
1 dried red chillies, crushed
1 clove garlic , crushed
½ teaspoon coriander seeds
1 tablespoon cooking oil
Salt to taste

Method

1, Heat cooking oil. Add chopped spinach , onion, chillies, coriander seeds and garlic. Shallow fry for 5-8 minutes or till fragrant.

2, Stir in rice, add water and chicken stock powder. Boil them immediately. Simmer the heat. Cover with a lid, about 15 minutes or the rice is tender and liquid absorbed.

3, Remove from the heat, stir in yogurt and chopped basil leaves. Mix well. It’s a nutritious rice for kids lunch box with Popeye ’s spinach.
