That’s One Huge Salad

How is it already 5:00!?!? It feels more like 3. I guess it’s because I didn’t eat lunch until 2!

We spent the whole middle of the day on the move - biking for about an hour and a quarter and then mowing the lawn. We biked to the greenway, biked the 4 miles of it, then came out the other side and biked home. I’m guessing it was about 10-12 miles? Then I ended up mowing the whole yard! The back yard is fun because it’s big and makes those nice lines. I wore my HRM the whole time and here were my stats:

Time: 2:08

In Zone: 4:30

Avg. HR: 99

Kcal: 397

As you can see, I was moving for 2 hours but my heart rate wasn’t that high despite biking fast and some hills. I should have thrown in some cardio sprint drills to spike it up! But the whole point was just to keep moving through fun activities, so it’s fine as is :) And who knows how accurate the HRM really is when you’re not that much in the cardio zone.

I came inside to make a huggggeeee delicious salad!

But I started with a piece of watermelon

I toasted a slice of the husband’s sourdough to make homemade croutons.

And I grilled carrots, peppers, and a peach!

I also tossed in a cup or so of leftover blue cornmeal okra.

The rest of the toppings: 1 slice cooked bacon, goat cheese crumbles, and leftover lemon-olive oil dressing that Karen made.

The husband made a huge salad as well. His was a BLT with jalapeno and croutons. Check out the size of his bowl - he used our giant salad bowl!

I’m trying to work on my to-do list so I can start tomorrow fresh. Ahhhhh! There’s too much to do.
