Water Chestnut Soup

Serves : 2
Preparation time : 30 minutes


Ingredients

300 g green / black water chestnuts , peeled and half boiled
50 g unsalted butter
50 g onions , chopped
30 g celery , chopped
10 g parsley , chopped
A pinch of cinnamon powder
1 apple
Salt to taste
A pinch of pepper powder
100 ml fresh cream

Method

1, Melt half of the butter in a heavy bottomed pan. Add chopped onion and celery. Cook for 5 minutes. Add water and bring to boil.

2, Peel and cut apple into small pieces. Add to water. Cook till apple is about to get soft.

3, Add water chestnuts. Boil for 5 – 10 minutes or till all the ingredients are soft.

4, Allow to cook for some more time.

5, Puree it in a blender. Add water if required.

6, Strain and set aside.

7, Heat saucepan. Add butter and cinnamon powder. Pour puree in the pan. Allow to boil on low flame.

8, Add cream . Serve hot.
