Banana Berry Oats

Good Morning!

I woke up to a "happy" scale today despite my indulgence at Yogurt Planet! Yah! I will say that I went to bed hungry and that usually means that I will have a happy scale day in the morning but I was dreaming of turkey burgers....my body must need some protein! May have to make those for dinner tonight.

I am on the right track, now I just need to keep up with it.... weight is such a tricky game. Because I can go both ways with this.... psychologically I can say that I am getting in the weight zone I want to be in and stay the course or say I am in the weight zone I want to be in so I can go ahead and indulge a little. I am hoping to stay the course and keep working!

I feel better and even though we are talking about a pesky 2-3 pounds I feel more in control of my eating and want to get back into a good exercise program.

I went for Oats again this morning... I had some thawed berries that needed to be used as well as a ripe banana so went for a bowl of "Whipped" Banana Oats topped with berries and some chopped almonds. The banana really adds volume to the oats and my bowl turned out HUGE! I ate the whole thing anyways... it was so delicious!

Banana Berry Oats

1/2 cup Rolled Oats
1/2 cup water
1/2 cup of Silk Vanilla Soy Milk with Added Fiber
1/2 banana, sliced thin
1 tablespoon ground Flaxseed
Cinnamon

Topped with:

3/4 cup of thawed frozen berry medley
7 almonds, chopped

In a medium size pan, heat the oats, water, banana, flax and cinnamon over medium heat. Once the mixture begins to simmer, approximately 4-5 minutes, stir, almost whipping, until the banana breaks down and the mixture thickens and becomes creamy, about another 1-2 minutes. Remove from heat and top with berries and nuts. Enjoy!
