img_2391.gifEvery few weeks I purchase celery and I think,“I’ll use this in a meal.  Maybe some vegetable soup or sprinkled over a casserole, or even just for snacking.”  And every few weeks, the celery starts to wilt because I never get around to using it.  It’s just one of those vegetables that doesn’t hold a whole lot of appeal to me.  Interestingly though, celery is a good source of Vitamin C, so here we go.

Peanut Butter dip!  This was delicious!  We used equal parts peanut butter and light cream cheese. Then a splash of milk, until the consistency was smooth.  I beat it all together, and offered for a snack.  If you use regular peanut butter, no sweetener needs to be added.  When using all-natural peanut butter, you may want to add a touch of brown sugar or regular sugar.

Timing is everything for the success of my experiments.  Late  in the afternoon,  when it’s too early for dinner, but too late for a meal, I pulled this out.  They were already crying about their intense hunger, so it was perfect.  All three kids had several stalks of celery and said I could make it again because they loved it.   Apple’s would also be a good dipper for this mix.
