
Good Morning and TGIF!
I just had the best bowl of oats and am quietly enjoying the peace in the house right now. My hubby was up and out the door early heading to Chicago and the kids and dog are still asleep. I treasure these little moments alone. I am drinking a nice cup of Joe and feel quite content from my breakfast.
I love cherries! They are such a rich beautiful shade of red and are sweet and tart at the same time. My cherry oats today were OUTSTANDING! Oatmeal really is one of my favorite foods and there is something so comforting about eating it. I also feel good about it as well, because it is very nutritious and I love adding ground flax and wheat germ to add a little crisp on top and also add Omega-3 fatty acids and Vitamin E.
Cherry Almond Crisp Oatmeal 1/2 cup rolled oats
1 cup of water
Cook for 4-5 minutes over medium heat until desired consistency.
Top with:
1 tablespoon ground flaxseed
1 tablespoon wheat germ
1/2 cup pitted cherries, sliced
1 tablespoon sliced almonds
Drizzle of Agave Nectar
Enjoy!

I have not done much baking lately, so I am excited to be able to spend some time in the kitchen this afternoon. We are going to be making a Cookie Cake for my son's b-day and my favorite recipe comes from
Alton Brown, The Big Chewy Chocolate Chip Cookie Recipe. I also have been craving Blueberry Crumble Coffee Cake... I am going to try to make a healthier version of what I saw but it has been on my mind and I think it would make a great breakfast for the weekend.... that or Buckwheat Blueberry Pancakes.
I have a Tortilla Soup that I want to make. Soup really does fill you up with very little calories, so I would love to start making some really healthy veggie soups.
So the jist of the day is going to be spending some time in the kitchen with my two sous chefs, Emmet and Zoe. So I hope to be sharing some recipes with you soon.
