

You GF/CF-ers near and dear to my heart, your Binty didn't forsake you! I know I've been posting all sorts of cringe-worthy pastas and pastries that aren't gut-friendly. But I'm still experimenting in safe ways too.
I whipped this up a couple weeks ago when I was craving something rich and chocolatey without too many guilt inducing calories and fat. I really wanted to eat a whole batch of fudge, or chocolate cupcakes with creamy frosting, or a chocolate cake drenched in chocolate ganache.
But the dairy-, calorie-, fat-laden treats were not to be found in my pantry (thank goodness!) so I had to make do. This is what I came up with -- a rich, dark chocolate almost pudding-ish confection. It still needs some tweaking, but it made a tasty late night snack and quenched my lust for chocolate.
Individual Cocoa "Cake" Confections
- 1/4 cup applesauce, unsweetened
- 2 egg whites
- 2 Tbsp + 1 tsp masa harina
- 5 Tbsp cocoa powder (I used Hershey's Special Dark)
- 1/3 tsp baking powder
- dash of salt
- 1/4 tsp baking soda
- 1/4 cup coconut milk
- 1/3 tsp vanilla extract
- 1/3 tsp almond extract
- 1 Tbsp sugar
- artificial sweetener to taste
- hot water (as needed for consistency)
1. Preheat oven to 350.
2. Beat applesauce, sugar, and eggs together.
3. Sift masa harina, cocoa, soda, salt, and baking powder together.
4. Mix coconut milk, vanilla, almond, and artificial sweetener.
5. Mix wet and dry ingredients together alternatively until well blended. Add hot water for desired consistency.
6. Pour mixture into 4 ramekins and bake at 350 for 6 to 8 minutes.
Each ramekin has 65 calories (by my calculations).
I thought the coconut milk would impart a creamier texture, but I'm not sure that the small quantity made a difference. It might be worth just using soy milk or even water and adding a bit more masa flour.
