Getting Started

I used to be a very health eater. B-school etc. has made me so busy that I barely think about what I am eating. It just has to be FAST. Time to change.

Store some apples, grapes, and any fruits that you like. Keep them on hand. They make a great snack, and take the same time and effort as a bag of chips!
When I was in law school, I would take Sunday afternoons to make very veggie laden spaghetti sauce to have on hand all week, with red peppers, tomatoes, olives, olive oil, garlic, onions and mushrooms. Sometimes, I would make a quick bread with mandarin oranges. Start getting into those Odwalla and other healthy brands of super juices. Buy up bags of pre-washed salads (stuff them into turkey, roast beef, chicken sandwiches). Even if you are on a hot dog budget, make them Chicago-style, with cucumbers, tomatoes, lettuce and onions!
I understand that sometimes it can be really difficult to find the time to make a healthy meal, but I'm a strong believer in that you really need to be intentional about eating healthy, and sometimes this requires that you change your priorities around so you are MAKING the time. I used to whine about how I didn't have time to be healthy but then I thought of all the moments I would sit around my house doing nothing or watching TV or talking on the phone--those were times I could have been in the kitchen fixing myself a nice, big salad for lunch tomorrow (pre-prepared is a must) or trying out a new recipe. Try to explore your options. See if you can find the time to cook. And if you really can't, make sure you stock up your kitchen with lots of fresh fruits and veggies that can easily be cut and ziplocked, so you can add them to meals the following day.
