Oatmeal Chocolate Peanut Butter Cookies

I had a serious craving for chocolate + peanut butter tonight. What a really wanted was a couple of Reeses Peanut Butter Cups butsoft, moist cake also sounded pretty darn delicious to me! ;-) I had some extra time this evening, so I baked up my own chocolate-peanut butter-cake creation

Oatmeal Chocolate Peanut Butter Cookies

Ingredients:

  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1 tbsp baking cocoa
  • 1/3 cup chunky peanut butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp canola oil

Directions:

  • Preheat oven to 325*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Use a tablespoon to portion cookies on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for 10-12 minutes.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

These cookies turned out big and fluffy, and the consistency reminded me of cake-like brownies

Mmmmm! I loved the peanut butter flavor in these cookies– it was prominent, but not overpowering. The cocoa/chocolate flavor blended nicely with the peanut butter.
