I had a serious craving for chocolate + peanut butter tonight. What a really wanted was a couple of Reeses Peanut Butter Cups … butsoft, moist cake also sounded pretty darn delicious to me!
I had some extra time this evening, so I baked up my own chocolate-peanut butter-cake creation!
Oatmeal Chocolate Peanut Butter Cookies
Ingredients:
- 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1/2 cup oats
- 1 tbsp baking cocoa
- 1/3 cup chunky peanut butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp canola oil
- Preheat oven to 325*F.
- Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
- Use a tablespoon to portion cookies on a greased baking sheet, approximately 1-2 inches apart.
- Bake cookies for 10-12 minutes.
- Remove cookies from baking sheet and allow to cool on wire rack.
- Eat and enjoy!

These cookies turned out big and fluffy, and the consistency reminded me of cake-like brownies.

Mmmmm! I loved the peanut butter flavor in these cookies– it was prominent, but not overpowering. The cocoa/chocolate flavor blended nicely with the peanut butter.
