Oatmeal Cottage Cheese Pancake
with Berry Syrup

Up early for a workout this morning because I am taking care of my mother in law as she goes through a tooth procedure today. We’re leaving at 8:15 for the dentist so I decided to get my workout done first thing.
At the gym I hopped on the Stairmaster for 30 minutes, plus 10 on the Stat bike and 5 of abs. I had a Vans blueberry waffle with PB before I left. I’m not crazy about these and much prefer Kashi brand.

The husband and I decided on cottage cheese pancakes this morning but didn’t have time to make a batch of small ones. So we combined oatmeal pancakes with the cottage cheese pancakes for this hybrid.
For 2 large pancakes:
- 2 packets of instant oatmeal (we only had thick rolled oats that I bought in bulk at EarthFare so I didn’t think they would absorb properly so I used instant instead)
- 1/2 a cup of egg whites
- 1/2 a cup of fat free cottage cheese
- 1 tsp baking powder
- 1 small banana sliced for placing on the top
Let sit for 15 minutes. Spray with cooking spray and cook over medium heat.
BUT - I don’t know if it was the batter or the pan, but despite the cooking spray these stuck horribly. We had a time getting them out of the pan and flipped in one piece. So I’m not sure I’d recommend this recipe hybrid!

For the berry sauce, we combined a 1/3 cup of fresh blueberries with about 1/2 a cup of frozen mixed berries with a tbsp of splenda and a quarter cup of water and cooked over medium heat until it reduced and was bubbly, about 5-7 minutes. It was almost like jam!

Breakfast was filling, but not as much as oatmeal. I hope it holds me through the dentist!
