Hi friends!
So sorry I didn’t come back last night….. jenna drank two glasses of wine then was out for the count. I was soooo tired! We had a blast though and here’s a lovely recap!
Ryan got in around 7:30 and we started with some crackers, grapes, cheese and my hummus:

I noshed on the grapes and ate the hummus (which I am liking more and more now) straight from the bowl. Mmmm
Glass of merlot number one:

And then we all sat down to a delicious dinner although we definitely chose to grill out on the chilliest night of the year!! My plate was FILLED with grilled veggies (onion, bell peppers and mushrooms) along with shrimp, a little bit of rice and my favorite salad ever:


It tasted amazing!!! I ate everything except for one slice of mozzarella and most of the rice…I really just picked at that and filled up on more veggies (I had seconds!).
And then for dessert……………

Holy incredible!!!!!!!! These were AMAZING!!! They tasted JUST like a reeses peanut butter cup—I ate one and Ryan ate three! I already have requests to make this for Christmas…and every other occasion once I move home.

And, yes, here is the recipe–very quick and easy!
Betty’s Incredible “Incredibles”
2/3 cup melted butter
2 cups graham cracker crumbs
2 cups powdered sugar
12 oz chunky peanut butter
12 oz semi-sweet chocolate chips
1. Combine the melted butter, graham cracker crumbs, peanut butter and powdered sugar. Press into a 9×13 pan. Flatten until smooth.
2. Melt the chocolate chips and spread over the mixture in the pan. Place in fridge or freeze until chocolate has hardened enough to slice. Enjoy!
After all that good food, wine and dessert I was ready to hit the sack! I woke up ridiculously early this morning (blehhh) and made some pumpkin banana oats for breakfast while Ryan slept on 

The combo today consists of 1/2 cup oats made with half silk and half water, 1/3 cup pumpkin, 1/2 banana, 1 huge spoonful almond butter (getting down to the last bit of my jar!!!) and tons of cinnamon
Betty and Ted are actually going out of town today for the night so it seems like Ryan and I have this huge house to ourselves. …couldn’t ask for a better weekend getaway! Once the sleepy head wakes up, we are going to head over to my place of work so I can show him all around and from there we are going to go out for lunch somewhere on the beach (probably just a sandwich shop) and then meet my dad at the golf course! Tonight, we are going out for drinks and dinner (just us, not my dad haha). It’s QUITE chilly outside—45 degrees!—-and I’m just hoping it stays sunny for us!
