I am stepping it up! No more “just take three bites”. No more piddly portions. No more veggie I.V.’s. Tonight I used a bag of broccoli slaw (pre-sliced broccoli stems with a few carrots and a little cabbage, $2.50 for the bag I got), added sliced apples, canned pineapple, and my favoritepoppyseed dressing. (A very small amount) We also had some baked chicken for dinner. That is all. I didn’t want any other food competing for the broccoli salad.
Then IPILEDit on their plates., (probably a 1 Cup worth) No mercy! At first there was definite complaining. “It’s too much salad“. “Where’s my grains“, “I can’t eat this much.” To which I replied, “Yes you will. Broccoli is so good for you. Start eating!”
I figured, even if they ate half, it was still more than they normally eat. When I put 3 TBLS of salad on their plates and they eat half, It’s like a drop of pee in the ocean. This way, the goal is greater, and the results were better! It wasn’t the most flavorful salad I’ve ever made (not enough dressing). But it wasn’t bad either. Once in a while a bit of pineapple brought the taste back. But, I knew there wouldn’t be gagging.
It was a complete success! Although nobody claimed to love it, flip-flopper and cereal boy ate all of it. It took Ketchup boy (my picky eater) quite a while to eat his, and he only ate half, but like I said, half of 1 cup is more than half of 3 TBLS.
Why broccoli?? Did you know, calorie for calorie, broccoli actually has as much protein as STEAK, without the saturated fat!! One cup of broccoli has 44 calories and almost 5 grams of protein. That’s impressive! Plus loads of vitamins (fiber, Vitamin C and K), antioxidants, phytochemicals,
