Today, I had a late lunch of polenta and tomato cooked in olive oil spray and sea salt over raw spinach. The warmth from the polenta and tomatoes just slightly cooked the spinach. It was a lovely and very clean tasting combo.


On the side I had a chickpea salad which I tried really hard to pretend was mock tuna. However, I have no idea what to use to get the fishy taste. I also think this would have been much better with veganase and pickles but I only had Smart Balance and Japanese cucumber. I spiced it up with lite salt and cayanne pepper. It's pretty good.
