
We love our breakfast smoothies….In the summer!! But its 15 degrees here in Utah and I just can’t make a cold smoothie for breakfast anymore. So, instead I turned my smoothie into syrup.
We’ve been using our homemade pancake mix for our waffles, just because its fast and easy. Then, I mixed up a smoothie similar to what I’ve made before, except I used strawberries, blueberries, flax seeds, spinach, and apple juice. I blended it up, and put it on the stovetop. When it started to boil, I added a little corn starch to thicken it up. I simmered while stirring for a few minutes, then topped our waffles with it. The longer it sat, the thicker it got, so I don’t know if next time I’ll skip the corn starch.
Cereal boy thought it was great! The nice thing is with maple syrup, I try to limit them to 1 TBLS, but with the fruit syrup, he was able to use as much as he wanted. The flip-flopper AND ketchup boy wouldn’t try it, but I thought it was super good.
