Haha, I slept in again today! Only til 10:14 this time ;) But it really is good for me to get this extra sleep. I kinda have a fear of sleeping in--missing a huge part of the day, being "off-schedule"... I've definitely been doing myself a
disservice to be getting 6 hours of sleep while my body is still trying to
heal. I also feel much
happier, which is definitely a good thing!
Tomorrow I have my appointment with the
surgeon at 9:20, so I'll have to wake up earlier. You guys are too funny, suggesting to
bribe him :D Haha, I think I should definitely bring him a
vitatop parfait -- with that kind of scrumptiousness, he'll definitely be in a good mood. And then when I say, "so can I run?" He'll be like, "what? Oh, mmmmm....sure....yum!" But I am
preparing myself for him to tell me I can't run for the full 6 weeks. That'd be til
August 4th (yes, I've already looked at a calendar, ha!). Today is the 2 week benchmark, so I'd be a
1/3 of the way there... not
so bad, right? *crickets*
Anyway, on a MUCH happier note, I had the most
amazing breakfast today! I made
overnight oats in greek yogurt, and they were bursting with flavor while being cool and refreshing. I used to eat this all the time at the end of the school year in
Arizona. They aren't the most beautiful thing (my roomie was always like, "what IS that???"), but they're ridiculously good.


Last night, I mixed together Oikos
greek yogurt, canned
pumpkin, regular dry
oats (I use 1/4-1/3 cup depending on how long I need them to hold me over. 1/2 would work, too), lots of
cinnamon and
pumpkin pie spice, a smidge of
unsweetened cocoa powder, and 1/2 a sliced
banana. Then I added a dash of
water to make it a little less thick. This morning I added a sprinkle of
unsweetened coconut and a spoon of
dark chocolate dreams pb.
I think it was especially delicious because the banana was super ripe, and the flavors had time to
meld in the fridge overnight. This is a great breakfast for when you don't have a lot of time in the morning, or you're too tired to make something nice. You just
pop it out of the fridge, add a little nut butter, and
chow:D Perfect summer breakfast, too.
Alright lovelies, I'm off to start my day. Got some errands to do, some harp practicing, some cleaning, and definitely some walking :) Have a beautiful day!
Q: What's your favorite breakfast that requires minimal prep time in the morning? My pick is definitely
overnight oats in greek yogurt. I love that you can just pull em out of the fridge and eat in the morning, but it still tastes like a decadent breakfast. I don't mind the extra work at night. But what about you? Do you prefer something
simpler, like banana + pb or cereal?
