I found this great webpage with details on kayak safety (click on the post title to access the page).
It suggest ways to kayak safely and what you might want to have with you if you encounter any trouble in the water. The safety equipment they suggest includes: life jacket, flotation (in both ends of the kayak-read the flotation section for more details on what they can include), first-aid kit, emergency locating devices (flares, smoke canisters, a flag, foghorn or air horn, etc.), and more.
If you're a beginner or even a casual kayaker, give this a read, and if you're going to buy or rent a kayak, I'm sure someone can point you to everything you need.
