Continue your holiday feasting with an easy gelatin salad the whole family will enjoy --- and the recipe makes enough for a crowd. Got this recipe from the dietician in my dialysis unit.
1 can (20 oz.) crushed pineapple, undrained
2 pkgs. (4-serving size) or 1 pkg. (8-serving size) Jell-O raspberry flavor gelatin
1 can (16 oz.) whole berry cranberry sauce
1 medium apple, cored and chopped
Drain pineapple, reserving liquid in 1-quart liquid measuring cup. Add enough cold water to reserved liquid to measure 3 cups; pour into large saucepan. Bring to boil; remove from heat. Add gelatin; stir at least 2 minutes until completely dissolved. Add cranberry sauce; stir. (Gelatin should be thick.) Pour into large bowl and refrigerate 1 1/2 hours or until slightly thickened (consistency or unbeaten egg whites). Stir in pineapple and apples and pour into serving bowl. Refrigerate 4 hours or until firm. Makes 14 servings.
