Hey Good Lookin...

What’s for dinner? Tonight I made lasagna roll ups. Haven’t made them in ages. Because of my work schedule, Hubble has had to assume the responsibility of cooking most meals. This dish is so easy, and fun to make. I don’t have a recipe… so it’s a little different every time. Boil up a bunch (I obviously boiled too many!) of noodles. In a separate bowl, mix up some ricotta cheese, shredded mozzarella, an egg or two, salt & peppa, and some powdered Parmesan cheese. Lay out one noodle at a time, and spoon on a glob of the cheese mixture… smooth about a quarter of an inch thick over the entire length of said noodle. Roll up your noodle (kids love to help with this step) a nd place in your favorite casserole dish. I put the seam down, but you can arrange them however you’d like. Then, pour over your favorite tomato sauce, homemade or from a jar. I usually add a can of tomato paste to thicken it up and to make it more rich… sometimes, meat or fresh mushrooms, sometimes not. I always add fresh garlic and Italian seasoning and top it with some shredded mozzarella and bake until it’s all melted and bubbly. If you feel the need to sneak in some veggies on your kids… cover your cheese with with spinach leaves before rolling them up… they hardly ever notice!

What came in the mail today? My new cell phone! I got a Motorola Karma. It is my first texting phone… so I’m excited to play with it. I always wanted a blackberry, but now that I have my ne tbook… I really don’t see a need to pay the smart phone fees. I hope I like this phone, I am stuck with it for two years.

What made me laugh so hard? I have always belted out into song around my kids. Usually in a goofy operatic voice. I overheard Baby Girl doing the same all by herself upstairs… singing about Halloween… like six octaves higher than Mariah or Celine.

What is Taking Heart up to? Well, changes are a comin folks. I love to simplify, organize… and rearrange furniture. I'm feeling the need to spruce up the place.
