Exchange Recipes

Mom's Pumpkin Bars

4 eggs
2 c. flour
1 tsp. baking soda
1 c. nuts (optional)
2c. sugar
1/4 c. melted butter or margarine
2 tsp. baking powder
1/2 tsp. cinnamon

Preheat oven to 325 Mix eggs, sugar, pumpkin and melted butter together. Add flour, baking powder, baking soda, cinnamon & nuts to creamed mixture. Pour batter into greased and floured pad. Bake for 25 minutes or until done. Cool completely in pan on wire rack. Frost with :

1 (3 oz) pkg. softened cream cheese
1tsp. vanilla
3 c. powdered sugar
Combine all ingredients and beat until smooth. Frost pumpkin bars.

Apple Cider Cinnamon Bread

1 1/4 c. apple cider
3c. white bread flour
1 tsp. salt
2 1/4 tsp. active dry yeast
2 Tbsp. butter, softened
2 Tbsp. brown sugar, packed 1 tsp. ground cinnamon

Place ingredients in bread machine in order listed. (top to bottom, left to right) Select "Sweet" settings (recommended to use light crust setting) and start machine.

Apple Quick Bread

2 medium apples, (granny smith), peeled, chopped and cored
1 c. sugar
1 Tbsp. lemon juice
2 c. flour
1/4 tsp. salt
1/2 c. butter
2 eggs
2 tsp. vanilla
1 tsp. baking soda

Streusel topping:
2 Tbsp. flour
1 Tbsp. melted butter
2 Tbsp. sugar
1 tsp. Cinnamon

Beat together butter and sugar. Stir in eggs. Ad lemon juice and vanilla. Sift together the flour, baking soda and salt. Add dry ingredients to creamed mixture. Stir in apples. Grease a 9x4" bread pan. Place half batter into pan. Combine all streusel ingredients and sprinkle HALF over batter. Add remaining batter and top with remaining streusel mixture. Bake at 350 for 55-60 minutes. Test for doneness with toothpick.
