Favorite Ingredient Friday

Posted Jun 13 2009 12:25am

In anticipation of the upcoming Super Bowl, this Friday and next Friday's recipes will be appetizers, main dishes, desserts, whatever you serve at a Super Bowl party.

Super Bowl? What Super Bowl? There is no upcoming Super Bowl. I'm, uh, still in denial that the Patriots cough cough lost cough coughto the Colts last weekend. So yeah, there's no Super Bowl for me!

I do have a couple recipes to share, and don't forget about the Baked Triple Veggie Dip I posted previously.

Hot Broccoli Cheese Dip
1. 1 pkg (8 oz) cream cheese, softened
2. 1 C sour cream
3. 1 envelope Italian Salad Dressing Mix
4. 1 pkg (10 oz) frozen, chopped broccoli; thawed, well drained
5. 1 pkg (8 oz) shredded cheddar cheese, divided
6. Wheat Thins crackers

Mix cream cheese, sour cream and salad dressing mix with electric mixer on medium speed until well blended. Stori in broccoli and 1.5 C of cheddar cheese. Spoon into 9 in pie plate or ovenproof crock.

Bake at 350 for 20 min.

Sprinkle with remaining cheddar cheese. Bake an additional 5 min or until cheddar cheese is melted.

Baked Cheese Wedges

1. 1 pkg (10 oz) extra sharp cheddar cheese
2. 1/2 C seasoned dry bread crumbs
3. 1/2 tsp crushed red pepper (optional)
4. 1 egg, beaten
5. Crackers

Cut cheese into 1/4-in thick slices (or buy the pre-sliced cracker-cut cheese!); cut slices diagonally in half.

Mix bread crumbs and pepper. Dip cheese into egg; coat with crumb mixture. Place on crackers; place crackers on cookie sheet.

Bake at 350 for 5-7 min or until cheese is melted.

Tip: For more cheesy flavor, sprinkle the crumb-coated cheese with grated Parmesan cheese before baking.
