I’m sitting here wishing it was still the weekend! We had an awesomely, tasty grilling weekend. First off we grilled some Ballpark hot dogs and burned them a little bit, the best way! Yummy! Yesterday we went all out lime! We had a chicken concoction “The Hubby” made up that had fresh ground coriander, kosher salt, paprika, pepper and a bunch of other stuff, with lime. We grilled some corn, limes and tomatoes!! The kids even had seconds. We over grilled the tomatoes (we grilled them with EVOO and kosher salt) and then I added some mozzarella cheese and OMG was it tasty!!! Oh and we also made some homemade lime margaritas with sugar rimmed glasses. Going to make the kids some virgin ones this weekend!
Today was “N’s” music recital, he totally rocked! I Flipped it, then the Flip froze, I guess I have been using it too much lately and it’s not used to it.
So now the fun will begin on Friday as I try to think of new, fun, quiet things to do with the kids. Normally we just go home and run like crazy up there, jump in pools, play at parks and hang with family but not this year (again). With “The Hubby” working from home and with him not having an office, it’s going to prove quite challenging since my goal is to also not spend money. This really should make for a fun summer. Have to move to Chi-town you know, need the money.
Alright well I need to get some stuff done and I want to grab more tomatoes so I have them on hand to grill at will.
