BURIED IN TOMATOES

I’ve been eatingtomatoes, eating dishes withtomato sauce, drinkingtomato juice, and processing and dehydratingtomatoes since 6 pm Thursday night. With an automatic dehydrator with a timer, that means 24 hours a day. Yesterday, it had gotten to where I could not taste tomatoes any more …. I had to stop for a while.

I have dehydrated a gallon Ziploc bag worth of sliced tomatoes (I really do recommend slicing them in rounds… if you do quarters or eighths, you will have to dehydrate for more than 24 hours), 1/2 a gallon Ziploc bag of tomato sauce (I did that when I realized I was never going to eat all the tomato sauce I had made– about a quart), and 1/2 a gallon bag of plain tomato puree (to make tomato powder) All of that was about 2 dehydrators full.

I still have a two racks of tomato slices and three racks of tomato puree (two of them went in tonight) in the dehydrator.

In the morning, if any of the racks are dry, I will process another food processorful of tomato puree and start that. Otherwise I will wait until tomorrow night.

I still have about 15 tomatoes left in the refrigerator, and a box of 20 lbs of plum tomatoes… they have been sitting there since Thursday… I hope they will be okay……. I should be able to get most of them into the refrigerator tomorrow.

I would like to make some more slices, if the ones in the box are still good. Otherwise, I will just cut off bad spots and make more puree.

I tasted some of the dried sauce — it is yummy enough to eat for a snack– the only thing is that the sauce, with oil in it, takes quite a while to dehydrate to crisp.
