This morning I was busy in the kitchen making a Quinoa, Black Bean, & Mango salad. This is my new favorite cold summer salad. I have made it maybe 4 times in the past month. It is super easy and super tasty. I don't usually like cilantro but in this salad it is a must. The flavors blend perfectly and it is so light and refreshing but it is a complete meal because the organic quinoa is a complete protein in itself. The salad consists of quinoa, black beans, scallions, bell pepper, mango and cilantro and is dressed with olive oil and red wine vinegar. I made this to eat throughout the week but it will probably be dinner tonight because I am not in the mood to cook anything. It is usually made with a red pepper (therefore making it much more colorful) but I only bought green this week because those red peppers are pricey! Still delicous, though!
