There's no two ways about it... I love good food. I know we're supposed to eat to nourish our bodies but I really feel there should be some pleasure involved in eating.
I had a delightful day food wise which started out with a replica of yesterday's breakfast. Almond butter and convenience are the only two things saving oatmeal. I've tried every concoction... believe me I have. It's funny how your tastes change over time. When I was younger I loved oatmeal but now not so much. I've also hated chocolate cake all my life and now suddenly I crave it like I'm
elpreggo (definitely not). Why can't my tastes change for the better? Is chocolate cake really necessary in my diet (diet as in food intake not weight loss... I don't do diets).
Lunch and snacks were c/o my laptop lunch once again.

More pita and spinach tip hiding in the little container, apples with cinnamon, yogurt,
Mueslix and 10 almonds, 2 clementines and cheddar cheese hiding in the front.
I had a 3 hour break between schools today and only a half hour commute between the two - Guelph to Milton... lots of time to kill. I read a little and then decided to stop in Bulk Barn. I didn't necessarily need anything but I figured it couldn't hurt to see what healthy goodies were hiding inside.
I walked out with $1.74 worth of chia seeds, brown rice and quinoa. Who says you can't shop on a budget. I spent less than 2 dollars on all 3. Bulk Barn is perfect for those who are cooking for themselves because you can scoop just enough for a dinner or two.
So tonight, I used one of my goodies to make dinner for today and tomorrow. Woo Hoo!

I found a recipe on the Weight Watchers website for Quinoa and Spinach. I added red peppers and used low-sodium beef broth instead of chicken broth (I used what was hiding in the cupboard). The recipe made 8 servings but I didn't have that much of each ingredient so I made it with what I had and created a 2 serving dish for the same amount of POINTS.
I wasn't sure what I was going to pair it with even though I could've just had it alone. Insert my lovely maja who was making penne with meat sauce. She gave me the leftover extra lean ground beef and I made meatballs.

It looks like it's swimming in grease BUT it's not. I used some beef broth to simmer them in. I know, I know... I'm pretty smart eh? The broth added loads of flavour without loads of fat! I used an egg white to bond them together, lots of Tabasco and whatever spices I could find in the cupboard. It really was a throw-together-whatever-you-have kind of night.

I split the recipe two ways so that I'd have lunch or dinner for tomorrow. It's brilliant I tell you... simply brilliant. No cooking for me tomorrow since I have a 13 hour day! Yay me!

I'm totally kicking tush on my goals this week! Off to do some pilates - my legs are destroyed from hot yoga and running. My core needs some lovin'.
