I am so happy to be in much better form today. That 'about to fall off the wagon' feeling has subsided and I feel back to my normal getting healthy self again. Difficult days like the past two make me super grateful for the great days, like today, that feel much easier. For dinner tonight I made a recipe that I have been trying to make for about two weeks now. Baked Zucchini Sticks. I am ashamed to say I have never cooked zucchini before. In fact, I usually avoid it in soups or salads when I am at a restaurant but of course as soon as I tired these tonight I found it to be delicious. Trying new things has really become an essential part of my success thus far, I used to feel the same about cauliflower before I made the soup too. I had only parmesan cheese on hand so I substituted that for the pecorino romano and it worked just perfectly. We ate them alongside a chicken breast smoothered in marinara sauce with a slice of low fat cheese on top and a ramekin filled with more sauce for dipping. It was a great hearty italian style meal with a healthy twist and I loved it! |
