Love this!

I am so lazy + I love all types of kale soup. But, I rarely make it, and then I found this at the grocery store.

Now, I didn't save any time, because I had no chicken stock in the cabinet, so I made my own, BUT, you bet I just dumped the bag-o-greens right in there in the end.  Now, I want to find more of these at the store.  Thank you Stop + Shop,  Shaw's + Super Wal-Mart.

Fresh_kale

I sort of made this recipe, but not really.

2 tablespoons (2 turns around the pan) extra-virgin olive oil
3 medium white waxy potatoes, like yukon golds, peeled and diced(I totally omitted these.)
2 medium onions, chopped
4 to 6 cloves garlic, chopped
2 bay leaves, fresh or dried ( I added oregano and basil)
1 pound kale, coarsely chopped
Coarse salt and pepper
1 (15-ounce) can garbanzos (chick peas), drained and rinsed (I used cannelini beans)
1 can diced tomatoes (I forgot these, didn't miss them.)
1 pound diced chourico, casing removed (I would have loved this, but I had turkey kielbasa on hand, and used it.  It is yummy and healthy.)
1 quart chicken broth
(I also had shredded meat in it - since I made stock)

And, I topped it with shaved parmesan.

 

Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.

Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.
